I'm going to guess, that the first thing that comes to mind, when you think of Ricotta, is either going to be lasagna or some form of Italian food, am I right?
Well, so did I. But after reading this blog, you're going to think of Ricotta a whole whey different.
First off, what is Ricotta?
= An Italian fresh cheese, made from the whey (liquid) left over, from cheese production. The texture is rich and creamy, and the taste is often described as mild and slightly nutty, with a subtle hint of sweetness.
Ricotta comes from the Latin “recoctus”, which means cooked twice.
Thanks to Pitbull, when I think of Ricotta, I think of his song "Cantare" ft. Lenier. Skip the video to the 24 second mark, when he says "estas como el queso Italiano, Ricotta", which translate to: "you are like Italian cheese, Ricotta (play on words, because rico means good)
Here's where you are going to start thinking of Ricotta differently, if you haven't already, thanks to Pitbull.

At the time that I signed up, they had a ReFUNd experience to purchase BelGiosioso Ricotta con Latte. I had to go to Kroger, take a picture of me with the product, then purchase the item, try it, submit my receipt and leave a review. After I completed the assignments, I would be ReFUNded what I spent.
Instead of making something Italian, I wanted to think outside of the box. When I google searched "recipes using Ricotta", I was intrigued by Ricotta pancakes, and then found a recipe that I liked and got to cooking.
Thanks to Pitbull, I can now say that these pancakes are like el queso Italiano, Ricotta, and literally made with Ricotta.
They are fluffy, creamy and slightly sweet, but above all, and most importantly, delicious. When my son tried them for the first time, he said, "whatever you did different, do it again!"
